Finally we start to get some new veggies after our winter of squash, lots of salads and…yeah, I don’t even know what else I have been eating.
Asparagus is one of our families favorite veggies. It comes out in the spring, which is why we are starting to see it, and it doesn’t have a super long season. Although when they ship it in from other countries it does extend the season, but I like my asparagus fresh. I personally think the longer it sits in the fridge the stronger it tastes, and not stronger in a good way.
Our absolute favorite way to fix these is grilling. You can do this one of two ways. You can lay them on foil or some people lay them right on the grill. I have done both, but in the end I prefer the foil, lot less casualties that way.
It’s so simple. Just add 1 Tbsp of Olive Oil and salt and pepper, then toss until well coated, throw on the foil and put on the grill. I cook these on medium high heat and cook until they have grill marks.
If you find a good sale you will need to store your asparagus, but it won’t keep for too long.
Wrap it in a wet paper towel and put it in the coldest part of the fridge. This will buy you about 3-4 more days. But don’t let this simple step keep you from buying it.
