I know I should have more pictures, but my meal that was supposed to be for our family of 4 became a meal for 5 and then last minute a meal for 7. Luckily I had everything I needed, so making it go farther was not a problem at all.
This is the flank steak I got at Costco a month ago. The 2 pack cost me $21, so this recipe was about $11 worth of meat. I had the corn and beans from my stockpile. I purchased the fresh cilantro for $.69, the avocado was on sale for $.79 at Haggen. I had my tortilla shells from Costco, you can read about those HERE. They come in a 2 pack and I store them in the freezer. I can’t imagine that this meal cost me more than $15 to feed all 7 people, 5 of which were teenagers.
I should also confess I don’t necessarily have a recipe, I kind of wing it.
1 Large Flank Steak
1 large or 2 small garlic (or more if you desire) pressed
1 Tbls Olive Oil
1 tsp. Cumin or to taste
3 Tblsp. fresh cilantro finely choppped
Take all the ingredients and spread them all over the flank steak and let that sit in the fridge for a few hours
Bring Flank out and set on counter and get to room temperature, at least 30 minutes.
Grill on Medium High for 5 minutes per side
Take off grill and let sit at room temperature for 10-15 minutes
Serve with Guacamole, sour cream, cheese and
Corn and Bean Salad
1 can black beans
1 can whole kernal corn
3 Tblsp. cilantro
1 tsp. cumin
1/4 c. red pepper or more if you like
make this dressing and add to rest of ingredients
3 Tblsp. Olive Oil
2 Tblsp. Balsamic vinegar
1 tps. cumin
salt and pepper to taste

I have to say it was so good, the meat was extra tender and the corn and bean salad always makes the Fajitas extra special.
These are not only Things I love Thursday, I can eat these often, because I love FOOD.
