These are a very favorite recipe of mine. Please don’t hate me because of one of the ingredients that I use, I promise it is so good.
I got this from a friend while living in Germany. It has become a “go to” meal every winter for the last 15 or so years. It was an American friend there is absolutely nothing German about it at all.
Meatballs
- 1 lb Hamburger
- 1 Egg
- 1 Package Beef Rice a Roni – don’t judge me
Mix egg in with hamburger, then add the rice only to the meat and mix well. Once mixed make into meatballs. Add to skillet and brown. While they are browning add the Rice a Roni sauce packet with 2 cups of water and bring to a boil.
Once the meatballs are browned put them in a over safe dish, pour boiling hot beef sauce over top and throw in the oven for 30-40 minutes at 375 degrees.
My husband likes them crunchy on top, so I cook them extra long.
Serve with rolls, baked potatoes and roasted carrots. Comforting and easy, and I promise it’s super delicious.

With the economy the way it is, it seems like everyone is cutting back and trying hard not to spend money aimlessly on things. I think this is great. This is something that many people have needed to do for years now. But with so many blogs out there filled with all types of money saving tips, which I too will share, there comes a point where you feel guilty buying something that you truly want or enjoy, but you need to know, it's ok to splurge every now and then. 



I would never, ever judge you for using Rice-a-roni. Now if you started eating at chains then I would judge.
