I am doing another menu plan this week. It keeps me focused at the grocery store and it also makes dinner so much easier and last but not least, it makes for a much more affordable week.
So without further ado I give My Eats for the Week
Monday:: Tacos
Tuesday :: Shoyu Chicken
Wednesday:: Beef in a Red Wine Sauce over mashed potatoes
Thursday :: Crockpot Chicken Fajitas
I will throw chicken breasts into a crockpot with a little water and garlic powder and cumin. Once done I will shred with 2 forks and serve on flour tortillas with sauteed onions, red and orange peppers and topped with our other favorite toppings like sour cream, cheese and guacamole. For my guacamole I take one avocado, mash with a spoonful of salsa and sour cream and a little garlic powder. Add a tiny bit of lime (or lemon if you don’t have lime) to keep in pretty.
Friday:: Out for dinner
Saturday:: Gone for the day
Sunday:: Baked Chicken with roasted potatoes and veggies

With the economy the way it is, it seems like everyone is cutting back and trying hard not to spend money aimlessly on things. I think this is great. This is something that many people have needed to do for years now.
