I won’t say I will commit to this on a weekly basis, but I want to show you what I am doing to help not only budget my meals better, but try and keep from making 4 trips to the store in one week. It’s true you always spend more when you go more often.
Sunday: Panko Chicken with Basil Aioli.
Monday: Sausage Bean Soup
Tuesday: French Dip – nothing fancy, just beef broth and roast in a crockpot, then put it on toasted buns. If you want to get fancy you can add a beer.
Wednesday: Meatballs, baked potatoes, rolls, salad
Thursday: Costco Chicken. My son catches a bus for Snowboard team so I need something easy for him that we can also have without making 2 complete meals.
Friday: Chicken Tortilla Soup: No recipe, just a can of corn, can of black beans, can of diced tomatoes, chicken broth, chicken (either left over or something in the freezer), salsa (to spice it up a bit more), and optional toppings like chips, avocado and sour cream.
Saturday: Tacos

With the economy the way it is, it seems like everyone is cutting back and trying hard not to spend money aimlessly on things. I think this is great. This is something that many people have needed to do for years now. But with so many blogs out there filled with all types of money saving tips, which I too will share, there comes a point where you feel guilty buying something that you truly want or enjoy, but you need to know, it's ok to splurge every now and then.
