I love grilling dough on the BBQ. It sounds hard, but it’s not. If you have never done it this is the way to start. Once you get the hang of it you will be ready to tackle a whole pizza.
I had no idea what I even wanted to have for dinner, so I began to rummage through my fridge to see just what I had left. We wanted something tasty, but light. This is what I came up with.
I had:
1 Yellow Bell Pepper $1
Marinate mozzerella balls that needed used up. $4.59 for a whole, used just under half so $2.00
Rhodes Frozen dough FREE
Basil – from my garden
I grilled the bell peppers until charred, then let them sit, so I could pull charred skin off. Then I diced them and also cut up the basil.
I always put the dough in the micro on defrost until soft, then splash with olive oil or Pam. Thinly slice the mozzarella.
Pat them out flat and lay right on the grill.
Once you flip them add the toppings and cook on low so you don’t cook the bottom faster than the cheese melts.
I usually do this with tomatoes instead of peppers, but I didn’t have any. The other thing is if you ordered the FREE Chevre cheese, this is a great substitute for the Mozzarella in this appetizer.
I also served these with grilled Chicken ($2.00), so the total was right at $5.
