I do everything on the grill. I love to grill appetizers, pizza, and even any fruit you can think of for a perfect dessert.
Today, I am doing Grilled Chicken with a Peach Salsa, Green Beans (from my farmers market), and Red Potatoes. A few things need some prep, but in the end it all goes on the grill and is thrown on one big plate or platter for easy passing and clean up.
For the green beans I put them in boiling water for 2-3 minutes, then immediately into an ice bath to stop the cooking. From there I lay down a layer of sweet onions, lay my green beans on top, drizzle with EVOO and salt and pepper.
For my potatoes I cut them into large cubes so they won’t fall through the grates. I add garlic, EVOO, salt and pepper. I throw them in the microwave for 2-3 minutes, then straight onto the grill.
For my chicken I add EVOO, salt, pepper and some poultry grill seasoning from Trader Joes.
For my Peach Salsa I pretty much wing it. I had some sweet onion left so cut up some of that, really fine. We don’t love raw onion, so we don’t use a ton. I cut up to peaches, added some cilantro from my garden, lemon juice (I didn’t have limes) and a tiny bit of sugar. Prepare it first and let it sit.
Once you have done all the prep work, everything goes on the grill at once. While it’s cooking you run in and wash the the 2 dishes you dirtied, then you grab your glass of wine and sit and relax.
Once it’s all done, you put it all on one platter. Presentation is great, serving is easy and cleanup is even easier.

That looks awesome! We have an old charcoal grill, but we really need a gas grill!!
Oh I don’t know Olivia, I do like the convenience of the gas, but would love the taste of a charcoal. Grass is always greener isn’t it??
