Shoyu Chicken Easy and Delicious

This is going on my rotating list of “quick fix” meals.  It’s simple, easy and delicious.

Shoyu Chicken
3/4 cup Soy Sauce
3/4 sugar or packed brown sugar
1/2 piece of ginger, peeled and sliced
2 garlic cloves minced
8 boneless skinless chicken thighs
Hot cooked rice

Put the first 5 ingredients in a skillet, bring to a boil, cover and simmer for 20-30 minutes.   Serve over rice.  I even got lazy and didn’t slice my ginger and it was still fine.

This is the perfect meal for when you are tired and need to get a good meal on the table and fast.  Best part is you put it all on to cook and then go kick up your feet.  I am not kidding.

The recipe comes from my friend Andrea over at Inspired2Cook.  When I was laid up Andrea even brought this meal to me, and my family loved it, but I had no idea how easy it was to prepare.

If you head over and check out how Andrea fixed it you will see she cut up the chicken and cooked it.  I was so incredibly lazy that day I just threw the chicken in whole, put the rice in the rice cooker and walked away.

After about 20 minutes I pulled out the chicken and sliced it and it was juicy and flavored perfectly.

The chicken I purchase from “reduced for quick sale” and it’s hormone free, free range and all that good stuff, for about $3, rice came out of the bin food section, maybe $1 and the salad was about $1, making this meal a $5 meal for 4.

  1. Glad you liked the shoyu chicken, friend! When I make shoyu chicken, I cook the chicken thighs whole…like you did. For serving, I either leave them whole or I cut each thigh into strips (like the photo on my blog). Either way, it’s one of my favorite quick meals.

  3. I grew up on this stuff. It’s one of my go to meals especially when I can find chicken thighs for 99 cents a pound or less. I make mine with a little water to thin the sauce out and on rice so ono.
