Baby Dutch Babies

I love Dutch Baby Pancakes, so much so that I tend to make them so often I wear everyone out.  Then I have to take a long break and then bring ’em back.

I saw this somewhere, for the life of me I can’t remember where, and decided to make mini’s just for a change.  This would make a pretty presention on Christmas morning with a stack of these dusted with powdered sugar.

I used my same recipe as follows::

1 cup of flour
1 cup of milk
6 eggs
4 tbls. of butter
pinch of salt

Mix the milk and flour together really well, then add in the eggs one at a time, making sure they are mixed in well.  Add a pinch of salt.

Spray muffin tins really well (yeah, I learned the hard way on this one).  You will have a little more batter than you need, so I just grabbed a small container for the last little bit, but if you have more than one muffin tin you can use that.

Heat oven to 400 degrees and bake for 15 minutes.

Then enjoy with your favorite toppings.  I love real maple syrup or even some fresh berries.

I loved the small dutch babies and they did cook very fast.  This definitely Works for Me.
